Just like that crazy little bird in those commercials. He is always exclaiming “I’m Coco for Cocoa Puffs! Coco for Cocoa Puffs!”
….now that you have that song in your head — hehe, I know that you do
…. When I sank my teeth into one of these babes, I became that crazy little bird! The only thing different was that I was exclaiming “I’m Coco for Choco-Date Muffins! Coco for Choco-Date Muffins!”

These look delicious! Love the date/chocolate combination! Never would have thought of it!
Thanks Sophia!
I love Dates and Chocolate too!
I always know where to come when I want a good dessert type dish
thanks Kat!… Dates are good but do you think dried cherries will work?
Dried cherries would be amazing!! But since they aren’t naturally as sweet as dates, I would add the little sweetener to them.
Girl you always make the most delicious-looking baked goods! So jealous
Awwwe, thanks Nicole! You are so sweet!
you little culinary genius!!!!! i love your healthy recipes.. these will be so good i can already tell becuz dates are so sweet and chcoolate is everybody’s dream!

I absolutely know without a doubt I would love these! But I would eat the whole batch so I can’t make em!
Hehe, try making half a batch. You will never turn back!
I was never coco for cocoa puffs, but I AM coco for chocolate+coconut+date combo
I LOVE this, Kat!
Thanks Alex!!! You are too kind.
Those look soooooooo good! I really need to get back to baking and when I do, your muffins will be at the top of my list!
That’s so sweet. Thanks!
Yum! I love adding dates to baked goods! They have such a wonderful natural sweetness! I love the toasted coconut topping on these…great for photo contrast and I sure it tastes amazing!
Dates are my favorite!!! I absolutely love them with Chocolate.
and the coconut compliments it so well. I have been dreaming of these ever since I made them.
OMG STOP IT! these look DELISH!!!!!!!!!!
Haha, thanks Brittany!
Girl, you’ve gotta stop making such amazing muffin recipes! You have me drooling and dying to make these. Where do you come up with the basic recipe? That’s what I struggle with the most. Do you just experiment a ton till you get the measurements right, or is it an adaptation from another muffin recipe?
I like playing around with recipes and making them my own.
I love having a challenge and taking a recipe that isn’t so healthy for you and transforming it into something that tastes just as amazing, if not better, but is so much better for you. It sometimes feels like it takes forever to get the right ratios for the right texture, sweetness, etc; but it is totally worth it.
Coconut and chocolate is my dream combo! These look delish!
Thanks girl!
You are like the muffin queen! I want to try all of your creations!
That is so sweet of you! Thanks!
Oh my those look fabulous!! I have a feeling though I would make the muffins HUGE. Im a fan of the big muffin top, what can I say
They would look adorable with muffin tops!
I love dates! They make great natural sweeteners
Agreed! I love them!
I saw your daddy at Costco this afternoon.
I still have to get used to seeing him on this side of town, hahaa. I can’t wait to see you tomorrow, deary!
Are you bringing some fun snacks to munch on for the drive up? I’m bringing apples… and maybe some sort of bar if I have the time.
My dad told me he saw you guys!
I can’t wait either! It is going to be so much fun!
Those muffins look delicious. Now I’m going to have that saying in my head all day. Thanks for that.
Hehe, you’re welcome.
I believe that was Coo Coo or like the bird ‘cuckoo’ for cocoa puffs but who cares, these look fab and thanks again for all your hard work sharing with the foodies.
I think you are right. Oh well. At least Co Co fits in with Cocoa.
I am coco for anything cocoa!! These look fab!
I totally agree!
These look GREAT! I love chocolate and coconut combos!
Me too!! Chocolate and Coconut were born for each other!
These look amazing!! I need to make more muffins (I feel like all I do is make muffins these days, they disappear so fast!) and I will definitely have to keep these in mind
I feel the same way! Muffins in my house go so quickly!! If I have the time, I make lots of muffins, and then freeze them–they seem to freeze pretty well– and that way I have a constant supply.
These look really nice! I’ve only ever had chocolate and dates blended together, a la raw chocolate desserts. I’m intrigued by the combination of chocolate and chopped dates.
Chocolate and dates go SO well together! They complement each other and taste divine!
these puffs look fantastic!
Thanks Darling!
These look great! Nice flavor combo
Awww, thanks Matt!
why isn’t “I’m coco for…” a phrase that we use? Let’s start it and it’ll be a national trend. Even more popular than fetch…
I love that idea!! We totally should!!
These look AWESOME! You amaze me with your healthy baking skills, love love LOVE this recipe! I will be making this soon!
Awwwwwwwww!!!! Thanks Kayla!!!!
Yum! They look so much like coconut topped vitatop muffins!! Which I’m so currently obsessed with:) love the recipe though, I’ll have to try them soon!
Hehe, they do look like Coconut topped Vitatop Muffins!
So I know we just met and everything, but I think I love you.
Hehe, thanks.
Those look yummy!
Thanks Darling!
Oh wow, those look delicious! I love that you don’t use any added sugars. I’m sure the dates are sweet enough. I used to make a banana microwave chocolate muffin, but you do get tired of banana after a while. I look forward to trying dates!
Thank you so much! That really means a lot to me!
One of the things I strive to do is reduce the amount of added sugar in my recipes, and replace the sweetness with healthy alternatives. With the dates, no added sugar is needed!
these sounds incredible! kind of remind me of the chocolate coonut chew larabar. even better in muffin form i bet!
