Hey my Scrumptious Chocolate Chips! :)

Thanks for all of your comments on my last post. I’ve really been having fun trying out my new watch and seeing if it will work for the AP test. So far so good!

Tonight is the Fundraiser for the Girl’s Camp I’m going to in June. We’ve been planning out the dinner, bake sell, and auction for months, and today is the day that it’s happening!

So, what am I bringing? I’m bringing:

Chocolate Covered Pretzels


I made about 45 and bagged 42 of them.


Some of them I dipped in white chocolate and sprinkled with pink sprinkles, other ones I dipped in milk chocolate, sprinkled with green sprinkles, and drizzled in white chocolate, …


…And other ones I dipped in milk chocolate and rolled in pecans/almonds and drizzled in both milk chocolate and white chocolate.

(And as it was National Pretzel Day yesterday, I’ll show you how I made these in my next post.)

Red Velvet Cookies with White Chocolate


This batch made a TON of cookies! I even have some that are not picture (there are at least 38 cookies in the picture; the batch made even more than what’s shown!).


I decided to do an alphabet theme since there would be a lot of families with little children there tonight. I know my little Sunbeams (3-year-olds) would like it. :)

And Swiss Chocolate Cupcakes frosted with a Homemade Chocolate Frosting.


I made about 31 of these – 24 for the auction and then a few I can give away.

My right knee has been bothering me for the past couple weeks. It started a few weeks ago, when I remember feeling some pain after riding the bike (not during — afterwards). And to tell you the truth, I pretty much ignored it. I just thought it was something that would go away if given time.

But it didn’t.

And then, a few days ago, I noticed that my right knee was swollen. It’s two times the size of my left knee and very stiff (I can’t raise my leg higher than hip-level, and neither can I raise my leg in the back (as if doing a butt kick) higher than 90 degrees). I can still walk around, but I can’t walk around too much, as it can get painful by the end of the day. We asked my friend’s dad, who’s a Rheumatoid Arthritis doctor, if he could take a look at my knee and see what he thought. After he explained how the swelling occurs and stuff like that, he strongly advised me to not exercise for an entire week. He also suggested I take 600mg of Motrin (ibuprofen) 3 times a day to help with the pain and swelling.

About 5-6 years ago, I had some problems with my right knee, and they diagnosed me with Juvenile Rheumatoid Arthritis (JRA). After sticking a needle in my knee twice (to remove the excess fluid), I really don’t want to have that happen again (as I don’t do too well with needles…). So I hope that the Motrin and rest does it, but I’ve been taking the Motrin since Tuesday and the swelling hasn’t really gone down; I think my parents will end up taking me to the hospital this next week. If they do, I’ll keep you posted!

I knew I wouldn’t be sane not working out at ALL, so I put together this is the workout that works the Abs and Arms. I made sure that the exercises wouldn’t put any strain on my knee, and I have been doing for the past couple day and have really enjoyed it.


It takes me about 30 minutes, and my arms and abs feel SO good afterwards. It has been keeping me sane while I wait for my knee to heal.

(I’ve also put together a full body workout that I would do if I COULD use my knee — I’ll share it as soon as my knee gets better and I can try it out.)

Out of curiosity, do you consider white chocolate as chocolate? I don’t know, since there’s no actual cocoa/cacao powder in it….

What did I do this past weekend?


Friday morning was spent buying me a watch with a stopwatch at Target for the Literature AP test in May (I perform better when I can see how much time has passed without having to look up at the clock on the wall),

Btw, the music underneath is the song “If The Savior Stood Beside Me,” and we’re singing it at the YW Recognition Night coming up this next Sunday (YW Recognition is a special night where my church recognizes the girls who have completed their Personal Progress, which is a program designed for the young women to become more like our Savior and Redeemer Jesus Christ)


Going shoe-shopping at Payless – my other ones like these are ripping up and BOGO is going on where I live, so we headed over there for a new pair. :) ,


And then heading over to Kohl’s to use the “$10 Gift” they had sent me.

While I was at Kohl’s I got this cute little blouse! I spent only $1.51 on it compared to the original price of over $38!!! I live really close to a Kohl’s store (I can walk to it as it’s less than a quarter-mile from my house) and I love that they send me those “$10 Gift” (as in $10 off $10, aka — $10 from Kohl’s) card all the time! Thank you Kohl’s! <3


Later that day (Friday evening) I went on another date (yeah, that makes three dates in the past week or so ;) ) – he took me to see the new movie “Mirror Mirror.” I was giggling the entire time! It is such a great movie; I REALLY like how it’s PG and is squeaky-clean (no language or anything). It’s a very cute version of Snow White and I would definitely recommend it! After the movie, we went to Jim’s and had dinner (I had the tilapia with beans and a salad on the side).

My Saturday was spent coloring. Seriously — with the exception of the dance I went to that night, I was coloring for my Sunbeams ALL day (there was a lot of little details in the activity that involved intricate care, so it took a pretty long time). My sister helped me out (I am so grateful for her, as I probably would have been up all night coloring if it hadn’t been for her). Even though teaching can take time to prepare, the smiles on the faces of my little Sunbeams are worth every second. :)


Speaking of the dance, this is what I wore. (I also tried braiding the front of my hair along with the flower – it’s kind of hard to see it in the picture, but it’s right in the front). I was super crazy all night line-dancing (my favorite!), bouncing all over the place to the upbeat songs, and learning two dances from France and Canada.

I promised to show my Prom dress – here it is!


I’m 5’4 and I have to wear heals for this dress to be just barely above the ground. I’ve been 5’4 for a pretty long time now, and a lot of my friends are taller than I am. I guess I’ll always look up to them. ;)

Is it very difficult to take a dress to the dry cleaners? I’ve never been there before, but I know I need to go get my dress cleaned before the big day. Also, I don’t know where to find one of those clear plastic coverings to keep my dress in so it stays clean and stuff – do you know where to find/look for one of them?

Do you love any excuse to bake cookies? We’re having another one of those fund-raisers in my church for Girl’s Camp for the young women and for all the Scout Camps the young men are attending, and I get to make red velvet cookies, cupcakes (I’m thinking of making chocolate ones, but I may change my mind and make peanut butter ones ;) ), and chocolate covered pretzels. I also have some zucchini in the fridge, so I’ll make sure to take pictures showing how I make my mom’s favorite zucchini bread and my favorite way to make chocolate-covered pretzels.

Do you have “assigned” spots for certain items in your room/home? A certain organization of your room? For example, I keep my purses on my front door handle, my earrings and pictures on top of my desk on the right side, my journal on the side table to the left of my bed, and my closet is organized left to right by color (red-pink-orange-yellow-green-blue-purple-brown-grey-black) and by item (blouses-shirts-tanks-cardigans-jackets-dresses-skirts-jeans-nice pants).

My Green Protein Smoothie!

Thanks for all of your comments on my post about how I was asked to Prom. I am really excited that he asked me and I’m looking forward to going with him. :)

One of my favorite meals (excluding bananas with nut butter) to make is a smoothie. For breakfast, lunch, or even dinner when it’s a fend-for-yourself day (like when my parents go out on a date or the rest of the family is gone somewhere or we just don’t want to cook).

I especially love to make smoothies on those days where I’m going to be out on the run all day and have to grab a meal quick before I leave.

When I’m in that situation, this is the smoothie I make.


My Green Protein Smoothie!


Add the almond milk, apple, and orange to the blender first.


Then add in the protein powder, flax, and cinnamon. (Also a sweetener if desired.)


And top it all off with the frozen spinach.


Pop on the lid…


And give it a whirl


Depending on the strength of your machine, you may or may not need to add some more almond milk.


Blend on high..


Until it is smooth…


And turns a beautiful green color.


Pour the smoothie into a quart-sized jar or measuring cup, or you can pour it into a couple of smaller cups or jars (great if splitting into multiple servings). Grab a spoon and enjoy!


My Favorite Green Protein Smoothie!

Ingredients

  • 8-oz frozen spinach (I use half of a 16-oz bag)
  • 12 to 16-oz (1 ½ – 2 cups) unsweetened vanilla almond milk (start with the 12oz, and add the extra 4oz if needed)
  • 1 medium orange, peeled and quartered
  • 1 small apple, sliced
  • 1 tsp cinnamon
  • 1 scoop unflavored or vanilla protein powder (soy, whey, hemp, or rice protein work)
  • 2 tbsp ground flax

Directions

Add the almond milk, apple, and orange to the blender first. Then add in the protein powder, flax, and cinnamon. (Also a sweetener if desired.) And top it all off with the frozen spinach.

Pop on the lid and give it a whirl at high speed. (Depending on the strength of your machine, you may or may not need to add some more almond milk.) Stop and scrape the sides if necessary, and then blend on high until it is smooth and turns a beautiful green color.

Pour the smoothie into a quart-sized jar or measuring cup, or you can pour it into a couple of smaller cups or jars (great if splitting into multiple servings). Grab a spoon and enjoy!

Note: Since everyone’s taste buds are different, you may or may not need to add some stevia or agave or honey to this – if I was serving this to my mom or my sister, I would definitely have to add a sweetener, but the sweetness is perfect for me. Just adjust the flavor to your liking. Since I use an unflavored protein powder and unsweetened almond milk, I sometimes end up adding a little sweetener depending on the size of my apple and orange. One easy way to increase the sweetness is to pick larger pieces of fruit to add to the smoothie (like a large orange and a medium/large apple;) or just add some more kinds of fruit like a handful of grapes for more sweetness. You can easily split this into multiple servings – sometimes I can’t finish, so I’ll save it in the fridge for later (like for lunch or as a snack). Substitutions – you can use coconut flour in place of the protein powder for a high-fiber smoothie; you can use chia seeds in place of the flax; you can also use frozen fruit in place of the apple for a more ice-cream-like thickness.

Makes 1 ravenous-Kat serving, or 2 regular servings.


It’s perfect for the summer months as it energizes you for those outdoor adventures and keeps you cool while playing in the sun!


A delicious way to get your greens in and become strong like Popeye! ;)

Do you like to make smoothies? I REALLY enjoy them in the summer months (which are approaching soon! :D ) as they tend to make me cold in the winter but cool off in the summer.

What is one of your favorite greens? I really like kale and collard greens, but the only kind of green I have tried in this smoothie is spinach.

Did you enjoy watching cartoons (like Popeye or Scooby-Doo) as a child? I remember watching the Smurfs, the Jetsons, the Pink Panther, Tom and Jerry, Popeye, the Flintstones, Scooby-Doo, and the Snorks. My life was pretty easy back then. But then High School hit. Ha-ha.

What’s been going on in my life recently?

Alex’s High Protein Cookies – (you can find her recipe here) I topped each cookie with a chocolate chip instead of mixing them in. Very good! I love how these have chickpeas in them.

Some things I’ve been making:


My Homemade Cinnamon Rolls (whole grain). I made some of these for my early-morning scripture study class a few weeks ago. They were really good and they loved them, too.


My Chia Protein Pancakes – topped them with homemade peanut butter. I blended the pancake batter up in my blender twice this time and added a little more baking powder. The batter was smooth and thick and made perfect pancakes!

And I got four blouses and a pair of jeans: the shirts were each $7.00 and the jeans were only $7.45! For jeans that fit really well, I HAD to get them. :)

I WAS ASKED TO PROM!!! The young man who asked me was really cute about it; he pulled out the note from a Reese’s pieces box while I was at a football game with him and his family and gave it to me. I was not expecting it at ALL! He’s one of my guy friends and I’m really excited to get to go with him. :)

Did you have a nice weekend? The football game was a lot of fun; we learned about birds and insects today in Sunbeams; I also watched four movies this weekend including The Prince of Egypt, Joseph: The King of Dreams, Rodgers and Hammerstein’s Cinderella (the 1997 one), and Disney’s Pocahontas. I loved singing along to each of them while I did some work on my computer. 

Do you prefer working out alone or with a friend/companion? I like working out with friends, as we can catch up with life and both get in a good workout at the same time.

Can you believe that today is 100 years today since the sinking of the Titanic? April 15th, 1912. The history in the textbooks that we learn about always seems like hundreds of thousands of years ago, but it is actually just a few generations ago. I feel so bad for those people who had been on that ship and never saw their families again.

Blueberry Coconut Protein Pancake!

Hey my Frosted Blueberries! :)

Thanks for all of your comments on my Easter WIAW! I really enjoy frosting cupcakes and baking zucchini bread (my mom bought some more zucchini, so maybe I will finally get to show you the version I make for her). 

What have I been loving for breakfast recently?

Not oatmeal!

This:


My Blueberry Coconut Protein Pancake!


Start heating up a nonstick (or lightly sprayed) skillet.


I set my stove surface burner on a heat/power of 3 (from a Low of 1 to a High of 9).


Mix together the coconut flower, chia seeds, and cinnamon.


Add the egg whites, almond milk, and vanilla.


Whisk it together with a fork…


Until there are no more lumps in the batter.


Stir in banana.


And then fold in blueberries.


Once your skillet is heated up,


Spoon the batter into your nonstick skillet in the shape of a pancake.


And let it cook for about 15 minutes.


It does take a lot longer on the first side than the second, but waiting 15 minutes ensures a better flip later! :)


Now, time to FLIP! Take you biggest spatula and softly scoot it under the pancake. Tilt the pan to the side and bring the edge of the pancake to the inside corner of the pan, both at 45 degree angles forming a V-shape. Now flip the pancake from the spatula to the pan facing down.

(If you’re left-handed, follow the directions as state above, but flip the directions the pan and pancake face at the angle: pan to the right and pancake to the left).


Let it cook for another 5 minutes until the bottom is a lightly golden brown.

Transfer to a plate, frost it with peanut butter, decorate it with another handful of blueberries, grab a fork, and DEVOUR! :D


Blueberry Coconut Protein Pancake!

Ingredients

  • ½ cup egg whites (up to 2/3 cup, depending on size of egg whites used – 4 large typically work)
  • 1 scoop (3 tbs) coconut flour
  • 1 tbs chia seeds
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 2 tbs vanilla almond milk
  • ½ banana, mashed
  • ½ cup frozen blueberries

Topped with 1 tbs peanut butter and another handful of berries!

Directions

Note: If you don’t have coconut flour, you can another flour like almond flour or buckwheat flour (whole wheat and oat would work too) or you can even use vanilla protein powder in its place. If you want to make this EXTRA HUGE, add a tsp of baking powder, split into about 3 smaller pancakes (to help with flipping), and cook until golden brown on both sides.


Nutritional information

Without peanut butter: 290 calories, 21.5 grams protein, 35 grams carbs, 17.5 grams fiber, and 7.5 grams healthy fats.

With 1 tbs all natural peanut butter: 390 calories, 25.5 grams protein, 38 grams carbs, 19 grams fiber, and 15.5 grams healthy fats.


Absolutely the BEST pancake EVER,

Have you ever taken an AP test? Have one coming up this next month? I went in today to the high school I’m taking it at and we went through a lot of the paper work (bubbling-in info, etc.), and now it’s really hitting me. 30 Days, and I’ll be taking both the Literature and Physics AP Tests. I already have my diploma (came a couple weeks ago), but I won’t really feel graduated until after my 17th Birthday, which happens to bet the day I take my Physics AP Test. But now, I REALLY know I need to keep up my studying and work at it as much as I can.

A Veggie-Filled WIAW + Easter Cupcake Creations!

How was your Easter?

I really enjoyed getting to spend time with my family, friends, and my Sunbeam class!

Some of the things I did included:


CUPCAKE DECORATING! I love decorating cupcakes. :D


MAKING ZUCCHINI BREAD! I made my mom some zucchini breadthis time with almonds in place of the raisins.


MAKE AN EASTER CREATION WITH MY SUNBEAMS! They were so excited to go home and show their parents and tell them the story of Easter! :)

Turkish Inspired Hummus!

Eating hummus always brings back memories from my childhood in Turkey.

I ADORED hummus as a child and still love it to this day!

And THIS one my absolute favorite.


My Turkish Inspired Hummus!


Rinse chickpeas (garbanzo beans) well in a strainer.


Add chickpeas to your blender/food processor.


Add the lemon juice, tahini, water, garlic, and chili powder.


Pop/twist on the lid.


And blend ‘er up! It shouldn’t take very long to combine – only a minute or two.


It should be nice and creamy when it’s done, with all the ingredients smoothly incorporated.


Once the dip is smooth, spoon it out into a Rubbermaid container and store in the fridge when not using (to keep fresh).


Turkish Hummus!

Ingredients

  • 15oz can (1 ¾ cup cooked) chickpeas, rinsed
  • 1 Tbsp tahini (sesame seed paste)
  • 2 Tbsp lemon juice
  • 3 Tbsp water
  • 2 cloves garlic, minced
  • ½ tsp chili powder (or up to 1 tsp if you want a kick)

Directions

Rinse chickpeas (garbanzo beans) well in a strainer and add them to your blender/food processor.

Add the lemon juice, tahini, water, garlic, and chili powder, pop/twist on the lid, and blend ‘er up! It shouldn’t take very long to combine – only a minute or two. The dip should be nice and creamy when it’s done, with all the ingredients incorporated.

Once the dip is smooth, spoon it out into a Rubbermaid container and store in the fridge when not using (to keep fresh).

Note: If using dry chickpeas, soak 2/3 cup dry beans overnight and prepare them as directed on the bag (boiled for about an hour or two), rinse, and use in place of the canned beans. You may need to add a little bit of salt, but only add it if it tastes like it needs it. Tahini, also called sesame seed paste, can sometimes be a little hard to find in a regular grocery store. My grocery store carries it in the nut butter section. I’ve also found it near the oils like olive oil, pumpkin oil, sesame oil, etc. If your store has a health food section that would be a great place to start looking too. Amazon also sells it if you don’t mind ordering food over the internet. But if you can’t find it, don’t worry — you can use another nut butter like peanut butter in its place I you’d like.

When my parents tasted it, the first thing they said was “TURKEY!” Turkey is also where my sister was born and where I met one of my best friends (we both lived in Turkey at the same time and were the best of friends; our families both moved (dads were both in the military) and we didn’t see each other for over 10 years; but now we live in the same city and our friendship couldn’t be stronger. :) ). So Turkey holds a dear place in my heart.

Have you ever had hummus? My favorite way to eat it is the way I ate it as a child — I use my bread as a spoon! ;)

Do you have a favorite food that brings back memories when you eat it? Hummus reminds me of Turkey, the smell of air conditioners reminds me of England, and those Texas-shaped tortilla chips remind me of my Lone-star state. 

How many glasses/bottles of water do you drink a day? My bottle is about 20oz, so I like to do the worth of 6 of them (it also has this handy-dandy tracker on the cap, so I can keep track). I thought I hadn’t drunk enough water Saturday night, since I woke up with a huge headache this past Sunday, but that must not have been the problem. I had to be careful with what I ate as my stomach was super sensitive and was easily made nauseous. I actually got really sick Sunday evening– I barely ate dinner, but all I wanted to do was to get whatever was in my stomach OUT OF IT. I didn’t throw-up, but my face turned pale, I lost my strength, and got really cold. I think it may have been me not getting enough sleep the past nights before (usually I’m really good now, but those few nights I stayed up pretty late and still had to get up at 5am) and a bug going around. Anyways, I’m feeling a TON better now and am back to life (and making sure I get enough sleep and drink lots of water)!
