Kat’s Vanishing Oatmeal Raisin Cookies

Oatmeal Raisin Cookies always brings back memories of Grandmother’s cooking.

The magic Grandma had of whipping up the best treats; Grandma not minding if I “tasted” the batter; the patience only Grandma possessed while waiting for the cookies to FINISH baking; the smell of freshly baked Oatmeal Raisin Cookies dancing about the kitchen as they finished baking in the oven.

The many memories that these Oatmeal Raisin Cookies bring back isn’t the only one reason I love them so much. They taste amazing too! 😀

Not only do they taste great, but they are also sugar free, and not to mention vegan. 🙂

Kat’s Vanishing Oatmeal Raisin Cookies

Ingredients

  • 1/2 cup preparedand rinsed white Navy Beans (or other white bean)
  • 3 Tablespoons Coconut Oil (or either Smart Balance or Earth Balance)
  • 1/2 cup Unsweetened Applesauce
  • 1/2 cup mashed ripened Banana (about 1 banana)
  • 3/4 cups Whole Wheat Flour
  • 1 1/2 cups Rolled Oats
  • 3/4 tsp Baking Soda
  • 3/4 cup Raisins
  • 1/2 tsp Vanilla
  • 1 tsp ground Cinnamon
  • 1/8 tsp each of ground Nutmeg, Allspice, and Cloves

Directions

Heat oven to 325°F.

In your blender, blend up the beans, coconut oil, banana, applesauce, and vanilla. (I used my Blend Tec)

In medium/large bowl, combine the flour, baking soda, cinnamon, nutmeg, allspice, and cloves.

Stir in the bean mixture.

Fold in the oats and raisins.

Cover with plastic wrap and put in the refrigerator for about 25-30 minutes. — Important step!

After the time is up, remove dough from the fridge and cookie scoop (I used a medium [#40] cookie scoop, or about 1 1/2-2 rounded Tablespoons worth) onto a sprayed cookie sheets. Flatten them with your fingers a little bit — like I show in the picture below.

Bake 6-7 minutes or until light golden brown. They should be slightly firm. They finish setting in the cooling process. Make sure NOT to overcook them!

Cool 1-2 minutes on cookie sheets; remove to wire rack. Cool completely (or eat them all up on the spot — your choice ;)). Makes about 24 cookies. 🙂 Store tightly covered (or in a Zipblock baggie) in the refrigerator or the freezer.

  1. Hi Girlie! Another uber-healthy recipe to drool over! I am really following your recipes with a great deal of interest right now, as you may very well know. I spent the weekend watching interesting videos about the causes of obesity on youtube. I “learned” some interesting stuff. I say “learned” because experts really vary dramatically in their opinions on what is and is not healthy. Two things that I am going to now live without are Agave syrup (which I now know you do not use) and also . . . drumroll please . . . coconut oil. There really just doesn’t seem to be a good amount of truth to the claim that it is healthy. I would love your thoughts on this! xoxoxox, Wendy

  2. These cookies are so healthy! How can you go wrong with oatmeal cookies?
    When I think of my grandmother I think of her homemade slovak donuts (umm not as healthy but delicious!)

    1. We just made some donuts in our Cooking/Chemistry Lab Class! It was so cool to learn about how Yeast in bread and the Baking Powder in Baked goods makes the stuff rise. It was so cool to learn about it! 😀 The recipe we used was from a grandma! 😀

    I would have never thought to put beans in a cookie, but its a great idea! I bet it really ups the texture and the protein content!

    1. It does!!! You would never know that the beans are in them!! You can be so sneaky and SNEAK in the beans, and your brother and sisters, kids and cousins, nieces and nephews, would never know. 😀

  4. I also made some oatmeal raisin cookies this weekend (but decided to put in some raw sugar because they were for my Uncle who says I eat “bird food”). When I saw the ingredients list of ingredients for these I was awed! I just may have to try them out for myself!!! Awesome!

  9. Oh my gosh, I could use some oatmeal raisin cookies right now. I love how the raisins get all plump and delicious.
    When I think of my grandma, I think of tacos. Whenever she babysat us when we were kids she always made tacos!

  11. Oh gosh, I LOVE a new, unique recipe and this is certainly it!! I don’t think I recall ever having seen a bean cookie recipe before but I am game for anything – especially when it involves oats, cinnamon and raisins :]

    When I think of my grandma I think of me and her sitting on my bed when I was little and reading. She is a reading teacher, she taught me how to love books. Everytime she visited me she brought a whole bunch of books for me to read!! She still does!

    1. Did you flatten them with your fingers gently before you baked them? That would be the reason they never flattened.

      How long did you cook them? If you OVERcook them, they do become dry.

      Try (1) flattening them, and (2) baking them @ 325*F for 5-7 minutes, depending on the size you make them. The smaller they are, the less time they take to cook.

      Tell me how they turn out! 😀

    When I think of my grandmother I think of baking extravagant things with her. Oh that and the unpredictable but hilarious things that come out of her mouth. (shes a 25 year old in a 80 year old body)

    When I think about my grandma I think of drinking black tea with milk and sugar with a slice of coffee cake! We’re Irish! 🙂 To this day, I drink Breakfast tea ever single night as my little treat.

  18. I tried these cookies tonight and they were great! I had never heard of coconut oil but was happy to be able to find it at the commissary near my home. They are great for breakfast or as a snack! Thanks so much for posting a great recipe!

  21. My sister-in-law makes brownies with black beans. The kids don’t notice a thing but I find they are a little too dry. She uses a mix.
    I would definitely need to be sneaky when making these.
