Who Can Say No?!

Hey my lovelies!!!

You guys are absolutely AMAZING!!!! Have I told you that?! I can’t believe at the response I got from my last post on Q & A on my past eating disorder! I’m so glad that you guys have found that balance with yourselves. I know that my balance may not be what everyone else’s balance is, but I hope all of you, if you haven’t already, find that balance with you.

Remember my post on the Faith Leap? While I was at Teen Conference, I got to spend a whole lot of time with my friends. In addition to all of the activities that we did, the food was INCREDIBLE!!! Alison really did an AMAZING job with everyone’s different diets and such. I was in absolute HEAVEN!!! If only we could have access to that Salad And Fruit Bar EVERYDAY my life would be complete. 🙂

Here are some of my eats for that Teen Conference weekend!!!

HUGE PLATES OF FRUIT!!!

They had so many different kinds of fruit! I instantly attacked the Watermelon, Strawberries, Pineapple, Cantaloupe, and HoneyDew. My mom doesn’t buy honeydew, so I really love it when places have it. 🙂

I brought my own oatmeal for my breakfasts, so I had oatmeal with my homemade Protein Powder.

Chocolatey and oh so good. 🙂

SALADS!!!!!

They had the Salad bar for Lunch AND Dinner — my favorite part of camp was this bar!! 😀 (who can say no to an incredible salad bar?!) This salad had leafy greens, carrots, cauliflower, broccoli, and chickpeas. The only thing they didn’t have were sunflower seeds!!! That would have made this salad PERFECT! 😀

And MORE Salads along side some Quinoa Stir Fry!

It was the same salad as before minus the chickpeas, and with edamame. Alison also made the BEST QUINOA STIR FRY I have EVER had!!! Do any of you have a recipe that involves Quinoa? I have a big bag of it downstairs and I want to use it! 🙂

Camp Food was simply AMAZING.

I also brought baggies of almonds for my snacks in the afternoon. 🙂 It worked out REAALLLLY well! 🙂

After Camp, we went to Culver’s!!! I usually don’t eat anything there, but because it was my birthday, I wanted a little something. So Kelsey and I shared a Cookie Dough scoop of frozen custard with banana!

It was really good, but WAY too sweet! I could feel the sugar in the cookie dough as though it were sand in my mouth! I could only take so much and then I was done. The bananas were really tasty though! 🙂

And THAT, my dears, was Teen Conference — Food Edition.

How do you prepare foodwise for camps? Do you pack everything, bring a few essentials, or just not worry about it? Usually I’ll ask what they’ll be providing and pack accordingly — bring essentials, like nuts, oatmeal, soy nuts, etc.

What is one of your favorite salad toppings? I LOVE SUNFLOWER SEEDS AND CHICKPEAS!

Do you have splurges once in a while? Rarely, but yes. Sometimes. It had really be a special occasion though — like my birthday.

  1. Yay, I LOVE this post! Allison was absolutely amazing with all the food. It was so nice of her to accommodate to all of us with special diets. I loved that salad and fruit bar! It was beyond amazing! I just need one of those at my house every day, hehe. The quinoa stir-fry was amazing.

    I totally know about that custard. It was yummy, but shockingly sweet. I very rarely get things like that; I usually pass, but sometimes for special occasions you gotta. 🙂

    I usually bring food to all my camps! This was the only one I didn’t have to. 🙂 Favorite salad toppings are chickpeas or dry-roasted edamame, raisins and nuts. Yum!

  2. That is so awesome that you went to such an accommodating camp! I would love to go somewhere where they serve healthy food! That would be so awesome! I love that they made quinoa….they are definitely up on what healthy!!! Love that!

  3. I haven’t been away to a camp since I was in high school – (like you are now) .. but at that point in my life, I was NOT concerned with health.. or food. I would pack snacks.. but nothing healthy.. and eat some pretty unhealthy stuff in the cafe! You are lucky to be so health conscious so early in life!

    I definitely think it’s good to splurge on occasion 🙂

    1. I have two ways. One involves dry roasted soy nuts (which is the one posted) and the other involves an unflavored protein powder and making it delicious without sugar. :)  The one pictured has ground soynuts, cocoa powder, cinnamon, and ground flax.

    I love walnuts, cottage cheese, sesame seeds, raisins/dried cranberries, strawberries, clementines, and sometimes cereal on my salads (the cereal adds a sweet crunch)

  6. I really love those fruit and veggie salads, seems like you really enjoyed your conference food-wise and fun-wise:)
    I like quinoa, I used it sometimes instead of oats to make a breakfast porridge, it is great sweet. But you can also add it to salads or to a “rissoto” instead of rice..it is very versatile.
    My favorite salad toppings are hummus, sprouted legumes, nutritional yeast sauce and any seeds or nuts.

      1. I like this recipe:

        You need:
        1/2 C cooked quinoa (rinse it very very well before cooking!!)
        1 C vanilla or plain almond milk (or other you like)
        1 tbsp ground flax or chia seeds
        Cinnamon, maple syrup (to taste)
        1 tbsp dried fruit (I like pears, raisins, figs…)
        1/4 C chopped nuts (I like walnuts the best)

        Directions:
        Combine cooked quinoa with milk in saucepan over medium-low heat until it thickens a bit and add ground flax or chia seeds. Then add cinnamon and maple syrup or other sweetener (or omit sweetener as I usually do) to taste. Pour into bowl and mix dried fruit and nuts.

        Good combination is also apples+raisins+almonds.

    I feel like I spurdge all the time, BUT it is always with healthy foods! I dont feel like eating regular ice cream or sweet chocolate! Give me the darkest chocolate, and let me make the ice cream from cashews and maple sirup- and Im happy 😀

    I like salsa and jalepenos or nutritional yeast on my salads.
    I’m leaving for camp in 10 days to be a counselor. I hope I have as much fun as you did 🙂

  9. I don’t have the habit of bringing my own food when I go somewhere. I would feel awkward, to be honest, so I don’t stress about it too much.

    Favourite salad toppings? Cheese! Chickpeas, too. 🙂

  10. I bring boxes upon boxes of food to running camp. But when you’re that active you just can’t eat enough at meal time to feed yourself. They have an awesome salad bar too! My favorite salad topping is probably potatoes. It sounds weird, but it’s really good!

  11. usually when I go to my summer camp (1 week long) I just go with whatever they’re serving. they have a lot of options and there’s a salad bar at lunch and dinner, so i know i’m set!

  12. oooohhh I love this all! I do have random splurges…. definately not as conserved as you lol I have outbursts and I go nuts and probably get way too much lol. And as far as salads go…. I’m a dried fruit kinda gal, I’d say raisins/dried cranberries or dried blueberries… and definately shredded carrots and nuts! haha

    1. The cookie dough was the flavor of the day. 🙂 I thought if I would have a treat, it had better be good, and cookie dough sounded better than just plain chocolate or vanilla. 🙂

  16. Wow! Awesome food bar!
    I find that teen conferences usually subsist on pizza, hamburgers, and ice cream so I usually bring a couple things to snack on but don’t go over board.
    It’s sometimes annoying when they don’t offer healthier options but I usually just try to make the best of it and just know I can go back to all my delicious food when I go back home.
    I think teen conferences (and other such catered events where food is provided for teens) should realize that there’s a good amount of people that would like some healthier and fresher options! You’re lucky they had a salad bar! It looks amazing (:

    1. I too feel that all camps should start making their meals healthier. The little things really make a difference. Use a little less sugar, bake instead of fry, serve more vegetable-based meals. By small and simple things are great things brought to pass.

    How awesome that they had so much healthy food for you guys! I have girl’s camp this month and if the food is anything like last year, there aren’t a ton of healthy options. They had a salad bar last year, but it was chicken caesar salad drenched in ranch. blech. Soo, I’m going to have to improvise!
