Dark Chocolate No-Bake Cookies!

Hello My Absolutely Amazing Chocolate Chocolate-Chip Cookie Dough Bites! 😀

Thank you for all of your comments on my last post. It really touches me when people take the time to comment, especially those of you who don’t even have a blog. And to my bloggy-friends, you are just so incredible. Right now, I’m getting that milk-post ready that I mentioned and I’d really love your thoughts on that, your views, etc. It should come soon.

But first, CHOCOLATE.

Chocolate should always come first in my book.

Well, as long as it is paired with peanut butter.

Or almond butter.

Or walnut butter.

And my most favorite way to pair chocolate and nut butter is in a cookie!


My Dark Chocolate No-Bake Cookies.

A Bomb for your mouth that explodes with chocolate and nut butter, all in the form of a cookie. 😀


Heat nut butter, nondairy milk, chocolate chips, and vanilla extract in a saucepan over low heat (my stovetop has a heat dial that goes from one-low to nine-high; I had it on two) until the chocolate chips melt (about three minutes).


Keep stirring the chocolate around once it starts to melt – that will help it melt and help prevent the chocolate from burning. Burned chocolate gets a grainy texture, and that’s not what we want.


Once the chocolate mixture is all smooth and creamy, (hehehe, and yes, I did use my 1 tbsp measure to stir up everything J)


Stir in oats.


and remove it from heat.

With a spoon, small ice cream scoop, or a melon baller (I used my #40 cookie scoop), drop about 6-8 cookie portions on a wax-paper-lined 9in-cake-pan or baking sheet.


Let them set in the fridge for about 10 minutes (or, if you are like me, you can just skip this and get to the next step :D).

Vegan, Dairy-free, Gluten-Free

  • 2 tbsp nut butter (I used creamy peanut butter)
  • 2 ½ – 3 tbsp nondairy milk (I used almond)
  • ¼ cup chocolate chips (I used dark chocolate)
  • ½ tsp vanilla extract
  • ¾ cup old fashioned rolled oats

I love mixing these up! Like with almond butter, walnut butter, crunchy peanut butter; coconut oil; semi-sweet chocolate, carob chips; shredded coconut, sliced almonds, sprinkles, mini chocolate chips; drizzled with peanut butter, chocolate, etc! :D!!!!! If you want the oats to soften faster, use quick oats. The sweetness really depends on the chocolate and milk used – and you can always add liquid stevia/agave/honey if desired. If you use some agave/honey/maple syrup, just cut back on the milk the same amount as you used the sweetener.

Do you prefer nuts or nut butter? For me, it really depends on the KIND of nut, like I prefer peanuts and walnuts as nut butter, and for almonds – usually just as the nuts, but after I made this, and this, I may have changed my mind. 😉

Do you prefer steel-cut, old fashioned, quick, or instant oats? I really like the steel-cut and old fashioned oats. The instant oats don’t fill me like the other two too. The quick oats I’ll use if it’s on sale or something, but usually I just buy the old fashioned.

Favorite kind of chocolate? Dark for me! Darker the better! No wonder I like Darth Vader…… jk 😉

  1. Too bad I am at work currently, otherwise I would go straight to the kitchen to prepare these! Looks delicious 🙂
    I like nut butters in my oatmeal, because they give it a nice velvety texture, but I like nuts for the extra crunch, or as a tasty and easy snack. I use only regular oats. Quick oats don´t fill me and steel-cut are not sold here.
    As for the chocolate – the darker the better. Hand me a 100 percent bar and I´ll eat it in a minute 😀

Hehe, we should have a sleepover and eat lots of 100% and stay up all night because of it. 😉 I find that same thing — the quick and instant just don’t fill me up like the old-fashioned and steel-cut do. Do they sell oat grouts (the whole oat, like wheat berries — but oats) where you are? You could take those and just chop them up in your blender briefly to make steel-cut. 🙂

    I definitely prefer nut butter – peanut and almond butter are definitely my fav. Although I really do love hazelnuts (I HATE nutella) and brazil nuts.
    I prefer steel cut oats, but sadly since I’m in my dorm room at college, the best I can do is quick oats cuz I only have a microwave!
    Oh for sure I prefer dark chocolate – it just tastes so much more decadent and yummy

  3. These sound so easy, but so delicious!! The type of thing that people would think you slaved over in the kitchen, but really it was super simple. I’m like you – I like certain nuts better as butter and certain nuts whole. I absolutely love whole cashews, pecans, and pistachios!

    I like pecans the best, they’re just really moreish! As for chocolate, I love cadbury dairy milk with hazlenuts which is milk chocolate, but I also like dark chocolate (not too dark, about 60% is perfect)

  10. i think i’m going to buy a little carton of milk today at work JUST so i can make these cookies tonight! HOLY YUM! anything eggless and therefore directly edible attached the word “cookies” and “chocolate” makes me quiver with excitement (so does anything that allows me to use that phrase). you’re so creative at coming up with recipes- what a blessing to have!
