At the end of the day, one of my favorite treats is soft serve. Since I have a dairy allergy/intolerance, I can’t eat regular frozen yogurt or ice cream. I can get the sorbets at restaurants and buy dairy-free ice cream at the store, but number 1) it’s not the same, number 2) they can have ingredient lists almost mile long, and number 3) they are expensive: $4 a pint! As a college student, I can’t afford that!
Also, up at college, I don’t have a fancy blender that can handle jobs like making soft serve from frozen fruit. I have bowls and a fork though!
Here’s how I make it by hand!
Banana Cherry Soft-Serve
- 1-2 frozen bananas
- 1/2 cup fresh cherries
- Dash of ground cinnamon
Prep beforehand: buy a bunch(es) of bananas. When they turn freckled and ripe (the more freckled, the better), peel them and place them in a Ziploc freezer bag. Place in freezer for at least 4-6 hours to harden. (I’ll do this in the early afternoon in time for a snack in the evening or the night before to prep for the next day.)
Remove 1-2 bananas and place in a bowl. Let thaw just until it is mashable. (If you are as impatient as I am, you can also place it in the microwave on “defrost” for about 30 seconds — check every 15 seconds, and adjust the time as needed– until it is slightly soft. You don’t want it too soft or it will turn to a liquid.) Use a fork to mash the banana until smooth.
Add ground cinnamon and halved cherries and DIG IN!
