Raw Chocolate Chip Cookies!

Hey my Chocolate Chip Swirls!

Thanks for all of your comments on my last post! Healthified Desserts are one of my favorites, and the ones I showed have some magic in them. When you feed them to your family, they won’t even know that they are getting healthy stuff! 😀

Do you like Chocolate Chip Cookies? I LOVE Chocolate Chip Cookies! 😀

Usually I make these or these when I want some goodness.

But sometimes I don’t have the time to bake.

Or have the patience to wait (I hate standing there trying to distract myself from the amazing smell of deliciousness coming through the oven doors as I wait for them to finish up baking ).

Or, I’m just being lazy.

When any of these are the case, I have the solution.

I make THESE!

My RAW Chocolate Chip Cookies! 😀

Not only are they RAW, but they are also DAIRY-FREE, GLUTEN-FREE, GRAIN-FREE, and VEGAN!

No need to wait. No forever eternities in the oven. No restricting yourself from tasting the batter — licking the spoon, btw, is HIGHLY recommended!

Add dates into a blender (this is my BlendTec).

Blend the dates until they are well chopped.

Like this!

Add the walnuts, salt, coconut oil, vanilla, and cinnamon.

BLEND ‘EM UP!

You may need to use a spatula to help the process.

The cookie dough is done when it appear like this! The walnuts are not all creamed, but everything sticks together.

Add the raw cacao nibs and shredded coconut.

Pulse until well combined (or just stir it up) — either will work. 🙂

Roll into balls and form into cookie shapes. HAVE FUN WITH IT! Try cookie cutters to make pretty shapes — just put the dough inside the cookie cutter and press together. I roll them into balls and flattened them into cookie shapes with the back of a jar.

You can eat them right away, but all to chill in the fridge for an hour to solidify.

Makes about a little more than a dozen cookies — depending on the size you roll them into. I usually make about 15 per batch + more for “testing to make sure not poison.”. 😉 Though, my parents never believe THAT reason.

Ingredients

  • 1 1/2 cup raw walnuts, pecans, or cashews
  • 1 cup dates
  • 1/2 tsp salt
  • 1 1/2 tbsp coconut oil
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 cup raw cacao nibs
  • 1/4 cup unsweetened finely shredded coconut

Directions

These are deadly.

Their flavor has me hooked. I just can’t get enough of them! And they don’t leave me hungry.

You don’t have to have a baked cookie  to have a good cookie — RAW is so much better (and perfect for a lazy girl like me ;)).

Have you ever sprained a joint? I think I have sprained my ankle at least 4 or 5 times in the same place over the last month or so — and I am so scared that I will sprain it again! It’s always on my left foot — when I land on it wrong, this pain shoots up into my leg and it is almost unbearable. I just have to get up and try to walk it off. If I don’t, the pain just stays. I don’t know what I’ve done to it. It all started when I was doing butt-kicks with Jillian. I guess I landed wrong and landed with a thump — as I hit the floor, I was clenching my ankle in pain — tears were falling. I thought it was just a one-time deal. Now I think it is something more. I think I may have to always live with, always worried that I’ll step wrong and end up with more pain, but all I really want is for it to go away. Should I get a brace? I don’t want to live with the chance of hurting it more.

Do you have a treadmill? My mom wants to get one and I am really excited. I would prefer an elliptical (since I can go for a run outside), but I like treadmills too. I prefer to run on a treadmill when it is really hot outside or it is really cold. Sunday’s temperature got up to 110 degrees F. It was hot.

Oh, and I woke up at 4am this morning. I really liked it! I was wide awake at my scripture study class, and I got my workout in before it! Workout+shower made me super awake. So I think I may keep this up. I got to bed at 10 pm, which is SUPER early for me (since I am a night owl, aka 1-2am). My goal now, since I think I will continue this 4 am thing, is to get to bed by 9. Ten is right now my max, but I hope to get to nine.

  1. Hi Kath! Wonderful cookies recipes! It made my morning instantly brighter 🙂 That´s cool you made them raw. Sometimes it´s nice to have to open the oven:)
    “Funny” you´ve mentioned the sprained ankle. I have sprained mine while doing Jillian´s high knees (not that it was that chick´s fault, but still, In my case it resulted into a one year long tendonitis, so I would suggest getting some gel for cooling your leg and visiting a doctor (if you haven´t done that already).
    We have a treadmill at home, but my mum use it as a coats hanger 🙂
    Great job on waking up that soon, I was sure you could do it! 🙂

  3. Yum yum yum! Raw and chocolate, what could be better!
    I don’t have a treadmill, I have an eliptical 😀 and I love it. It burns way more calories and provides a whole body workout while being low resistance. I was deciding between it or a treadmill, but I feel the same way as you, I could just go outside for a treadmill workout.

    As for your ankle, have you seen a doctor? It might be either strained (ligament damage) or sprained (tendon and muscle), both pretty serious if it keeps happening depending on what severity grade it is 😦

    1. I haven’t seen adoctor about it, but my dad has something similar — weak ankles, as he put it. He said I may have inherited it from him. My dad has a brace (an elastic one), so we might try that.Maybe I can see a doctor when I get another appointment with my GYN about my “other situation.” I know that I can still walk on it — it just hurts.

  4. these look so good, I am so excited to get my first blender it should arrive anyday soon!!! I haven’t been able to make many of the lovel recipes on blogs. Will let you know how they turn out I have never tried raw cookies.

        1. Not really. You don’t want them pureed, just chopped up pretty finely. If you have to, you could also just finely chop them on a cutting board, but I’m sure your blender would handle it. 🙂 Maybe you could try blending both the dates and the walnuts together at the same time, or in small batches. I know that Magic Bullet isn’t very large.

    I do have a treadmill, but I am kind of afraid of it after I fell off it once! It was not pretty 😦

  6. These look amazing! I’ve never had raw chocolate chip cookies before. I sprained my ankle once in the third grade. I had to walk around with crutches for a week, and for some reason, I remember feeling really embarrassed, lol. I don’t have a treadmill but I wish I did. Then maybe I would exercise more!

    1. So when you sprain your ankle, you walk around on crutches?? I can still walk around fine — I just can’t let my foot twist around. That’s when it hurts. But I’m feeling better now. Maybe I just strained it….. I don’t know.

      1. I think it might depend on how badly you sprain it if you need crutches or not. I couldn’t walk on that foot, so I needed them. I’m glad you’re feeling a little better though! Maybe it just needed some rest.

        1. Yeah, I’m actually feeling fine right now. There’s no pain when I walk — only when I bend it from side to side does it bother me. I’m guessing I may only be pulling it or something. I don’t know. It hurts ALL day when it happens, and then starts to feel better in a couple of days. Thanks for your reply! 🙂

  8. Oooooooh, these raw cookies look super yummy! Keeping myself occupied while baking is so hard – the smell of whatever I’m baking is hypnotizing! Haha! 😛

    1. My mom and I think that getting a treadmill will be beneficial just for that reason — you can watch a movie/show as you walk/jog/run. It would really get my sister to finally exercise — she NEVER does it! But she does watch tv, so I think it will be very beneficial to all of us! 🙂

  9. Make sure you ice your ankle! Even if it’s not visibly sweilling, it IS swelling inside and that can cause more damage and pain. I used to sprain my ankle a lot in gymnastics and my dad (a chiropractor) always told me to walk it off, no matter how much it hurts dont baby it or use crutches bcause it will get even weaker and tighter and more prone to another injury. You may just need to strengthen your ankles. I actually had ongoing problems with my ankle until I started going barefoot/running barefoot and after that they completely went away! I think it made my ankles and feet a LOT stronger.

    I NEED to find a way to get my hands on cocao nibs!! We don’t get them here and I keep reading about them everywhere!

    our house is too small to have a treadmill but when it is -40 and we have 5 feet of snow outside, it would sure be helpful!

    1. The treadmill we’re thinking of getting is a foldable one, so it just folds up and is stored out of the way! Maybe you could look into one that does that! 🙂 Maybe you can find them online — I know you can get them through Amazon.com.

    I’m going to give this recipe a go over the weekend now that I have a semi-food processor!! I’ve never made raw cookies before! (Just licked clean the dough from the mixing bowls when making normal cookies….) These sound great, and I looove dates. Yum 🙂

    I have a treadmill and use it everyday of the week (except on rest days of course!) to warm up or do my cardio workout on.
    oof- four in the morning? that is just unheard of in my house! 😛

    1. I’ve actually adjusted to it quite easily surpringly. I NEVER would have even CONSIDERED the THOUGHT of waking up at such an hour, but now with school and my morning scripture study class, it makes sense to me. I don’t want to take two showers in the morning (one before class and one after my workout), so it works out better if I just do my workout BEFORE. Though I will always listen to my body. If my body is saying I need the sleep that morning, then I will. But since I’ve started going to bed earlier, I feel great! 🙂 Haha, if you read my post on my Peanut Butter Chocolate Chip Banana Pancakes that I made for my dad for his birthday, it shows what I used to think about waking up at 4am. 🙂
